St. Louis BBQ Pork Steaks

Spice Rub and Pork Steaks

  • 1 Tbs packed brown sugar
  • 1 Tbs Paprika
  • 2 tsp dry mustard
  • 2 tsp black pepper
  • 1 tsp onion powder
  • 2 tsp garlic salt
  • 1 tsp ground cumin
  • 1/4 tsp cayenne pepper
  • 4 or 5 (1 pound each) pork steaks

BBQ Sauce

  • 2 cups beer
  • 1 1/2 cups ketchup
  • 1/4 cup steak sauce
  • 1/4 cup packed dark brown sugar
  • 2 Tbs cider vinegar
  • 2 Tbs Worcestershire sauce
  • 1 tsp garlic salt
  • 1 tsp hot sauce
  • 1 tsp liquid smoke
  1. For the spice rub and pork steaks: Combine sugar, spices, and seasonings in a bowl and mix thoroughly. Pat pork steaks dry and rub evenly with spice mixture. Cover and refrigerate for at least 1 hour.
  2. For the Barbecue Sauce: Whisk all ingredients together.
  3. Cook steaks on a hot cast iron pan, sear on both sides, then lower heat and cook for another 10-15 minutes.
  4. Turn on broiler in the oven. Coat steaks with Barbecue Sauce and roast under broiler until edges start to blacken and crisp up.
  5. Transfer to serving platter, tent loosely with foil and let rest for 10 mins. Serve with left over Barbecue Sauce.
