Pork Gazette Bacon

 My name is Billy and I am a Porkaholic. Unless I’m mistaken, it’s a great day for bacon.

Today I want to talk about my personal holy grail of food – bacon! Fatty, crunchy, chewy, salty, hot and meaty, it is the most satisfying bite in the world of flavor-obsessed people like you and me. First, I eat bacon with my nose. The smell fills the house and like a bear to honey, I follow my nose to the prize. 

Next, I hear that little sizzle, sizzle in the pan

“Come and get me if you can.” It says to me. Gets my attention every time. And when I see those crispy, crinkly strips of golden-brown deliciousness, I start to drool. (OK, there I said it.). It’s a short trip from the plate to the mouth and that is where the magic happens. 

Bacon goes by many names: pancetta, gammon, rasher., meat candy, breakfast canoes and my favorite – porkgasm. Call it what you will, I’ve eaten more than my share.
